This is a can’t-get-enough-of-it dish that will quickly become your fav summer dish. Make ahead and bring it out at dinnertime! I changed the recipe to lower fat ingredients, and it tastes as great as the original. My mouth’s watering already.
~ ~ ~
2 c cauliflower
2 c broccoli
¼ c white onion
1 c chopped pecans
4 slices turkey bacon
1 c fat free mayonnaise
¼ c low fat parmesan cheese
2 Tbsp sugar
¼ tsp basil
¼ tsp salt
2 c romaine lettuce, chopped
Cut the cauliflower and broccoli flowerets into bite site pieces. Rinse and blanch in the microwave for a minute.
Mince the onion. Cook it in the microwave for a minute.
Toast the pecans for 10 min in a 325 oven.
Chop the turkey bacon before cooking. Set aside.
Mix cauliflower, broccoli, onion, and pecans in a large bowl. Set aside. Mix mayo, parmesan cheese, sugar, dried basil and salt in a small bowl, then add to veggies in the large bowl.
Add romaine to the sides of a serving dish. Heap the coated veggies in the middle and top with bacon. Can be made ahead of time and refrigerated – but wait on the bacon until you’re ready to serve the dish.
Heading to a Pot Luck or a Church Social? This recipe doubles easily for crowds.

Something evil lurks in this town of secrets.
Solving Mossy Bog’s first fire fatality could net police officer Laurie Ann Dinterman the promotion she desperately wants. When the state arson investigator arrives to take over the case, Laurie Ann is assigned to give the man everything he needs while keeping him alive. The fact he’s the sexiest man ever to hit town shouldn’t make a difference.
Hot on the trail of a serial arsonist, Wyatt North demands justice for his partner, the arsonist’s first victim. He’ll find the murderer or die trying—no matter how distracting the tall, lithe figure of his local partner is.
As the investigation zeroes in on a suspect uncomfortably close to Laurie Ann’s life, her cop instincts conflict with her feelings for Wyatt. Worse, the arsonist will do anything to protect his identity.
Can Laurie Ann accept the truth in time…or will she and Wyatt go up in flames?

Thanks for having me as your guest, Dee. I hope folks enjoy this dish as much as I do!
Looks an amazing salad, Maggie. Does it need to have the sugar? (My hubby is diabetic)
I really enjoyed your 'Hot Water' and am looking forward to more in this series.
Dee, I love the idea of your blog! Really original.
Sounds good! Salads are always popular for parties.
Sounds like a good dinner, Maggie. I love pecans and Parmesan cheese with salad. I'll have to try it.
Loved HOT WATER! Hurry up with the next Mossy Bog mystery--I'm ready for it.
Lindsay, you could easily ditch the sugar if you liked, or add in some sugar substitute if that's your preference. I'm not diabetic and figure anything that makes me eat more veggies is a good thing...
Thanks, Nancy and Ellis! The next Mossy Bog mystery is in my editor's hands. Hope to know something about its fate soon.
Good recipe for summer meals!
Thanks, Jacquie!
Looks like one I'll "steal" for our monthly pot luck suppers.
I'm sure you'll enjoy it, Terry. I made the dish the other day so that I could take the picture of it - that batch is all gone and I'm thinking about making another batch today or tomorrow. I'm hooked!
Maggie, this salad looks delicious. I may try it, but why the sugar? I think I will leave it out and I'll use grilled chicken instead of bacon--bacon is not my favorite.
@Lindsay-- thank you! Keep coming back!
Mona - I had this at a function, begged the recipe from the creator and it came with sugar in the brew. Since I was going for low fat this time, I didn't cut the sugar, but I don't see why you couldn't cut the sugar altogether. I bet it'd be a meal if you added chicken. Great idea!
Sorry, slightly superstitious author here. I couldn't leave the comments at 13. Anyway, I'm clocking out for the day and I wanted to thank Dee again for hosting me here at Romance Cooks. What fun! I might even take up cooking for real.
I love the blurb, Maggie! It sounds HOT (pun intended!).
Looks delish, Maggie! And a delicious blurb, too!
A police officer and an arson specialist sounds like hot chemistry to me. I loved the logline--so enticing.
I really liked that the salad was nutritious and low fat. It looks delicious.
Sorry I'm late getting here.
Thanks for the visit and the comments, Gail, Vanessa, and Sarah! Enjoy the book and the dish!
