Gazpacho – Lisa Fox

I could live on cold soup and champagne all summer long!

Gazpacho

· 6 tomatoes, diced

· 2 cups tomato juice

· 1 cucumber, diced

· 1 ripe avocado, chopped

· 1 clove of garlic, minced

· 1 small red onion, diced

· ¼ cup red wine vinegar

· 2 tablespoons freshly squeezed lemon juice

· 2 tablespoons extra virgin olive oil

· 6 or more drops of hot sauce to taste

· Salt and pepper to taste

Directions

Combine all ingredients in a blender. Puree mixture for about 15 seconds. Place in a non-metal storage container, cover tightly, and refrigerate overnight to allow the flavors to blend.

Serve chilled with a dab of sour cream.

Makes about 8 cups
