Mrs. Maylee’s Pumpkin Bread – SJ Maylee

After I got married, my MIL introduced me to pumpkin bread. Oh my, it’s so good, a perfect side to my favorite cup of coffee and the story I’m writing. I make double batches because it freezes so well. For this, I use real pumpkin.

~ ~ ~

Mrs. Maylee’s Pumpkin Bread

Makes two loaves

Sift together:

3 cups all-purpose flour

¾ teaspoon salt

2 teaspoons baking soda

1 ½ teaspoons cinnamon

1 teaspoon nutmeg

1 teaspoon cloves

¼ teaspoon allspice

¼ teaspoon ginger

In a bigger bowl beat together:

16 oz. can pumpkin

¾ cup canola oil

2 ¼ cups granulated sugar

4 eggs

Add the dry ingredients to the wet, stirring until well blended. Spray non-stick loaf pans with cooking spray and fill with the batter. Bake for about 50 minutes at 350 degrees F or until a toothpick comes out clean when inserted into the center of the loaf.

Pumpkin Cheesecake Muffins – Helen Scott Taylor

Pumpkin Cheesecake Muffins

At this time of year everyone's thoughts turn to …pumpkins! Some people focus on carving them but I prefer to eat them. J

I recently tried this recipe for Pumpkin Cheesecake Muffins and they are delicious. I don't have time to spend hours in the kitchen as I'm usually busy writing, so I can assure you they are quick and easy to make. Enjoy!

Pumpkin Cheesecake Muffins

Makes 12

Ingredients

MUFFINS

1 15 oz can pumpkin

1/4 cup vegetable oil

2 large eggs

1/2 cup sugar

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

TOPING

8 ounces cream cheese, at room temperature

1 large egg yolk (The white can be added to the muffin mixture.)

3 tablespoons sugar

1/8 teaspoon vanilla extract

Directions

In bowl one put the pumpkin, oil, sugar, eggs and vanilla. Stir thoroughly with a wooden spoon until well mixed.

In bowl two put the flour, baking powder, baking soda, salt and spices. Mix with a fork.

Add the contents of bowl two to bowl one gradually, mixing well with a wooden spoon until thoroughly blended.

For the toping, mix together the cream cheese, egg yolk, sugar and vanilla until smooth and creamy.

Grease a standard sized muffin tin.

Evenly distribute the muffin mixture between the twelve cups.

Add a small spoonful of the cream-cheese mix to the top of each muffin and swirl in with a skewer.

Bake for 25 to 30 minutes at 350 degrees, turning the tin halfway through cooking.

Store in an airtight container. Lasts for two to three days.

Blueberry Muffin – Samantha Ann King

Annie’s Soup Kitchen is known for its blueberry muffins. On a visit there many years ago, I picked up their recipe and made a few changes. These muffins aren’t overly sweet, so they’re delicious with fresh fruit or eggs (or both) for breakfast or with a bowl of vegetable soup for lunch or dinner.

Blueberry Muffins

Preheat oven to 400°F.

Ingredients

2 ½ cups whole wheat flour

2 teaspoons baking powder

A pinch of salt (⅛ teaspoon)

1 teaspoon soda

Mix dry ingredients together.

3 eggs beaten until frothy (The original recipe reads “beaten till stiff”, but I can never get mine stiff.)

½ cup sugar

1 ounce melted butter (cooled)

2 cups non-fat Greek yogurt

1 ½ cups blueberries (or more)

Add sugar to eggs gradually as you mix.

Fold butter and yogurt into egg mixture.

Fold liquid into dry (do not overmix).

Add blueberries. Fold gently. The batter will be thick!

Coat muffin pans. I use melted butter, but you can use your favorite oil or non-stick spray. I use two different sizes of muffin pans. One makes 6 large muffins and the other makes 12 regular size muffins, so I end up with 18 muffins. Fill the large muffins about halfway. Fill the medium muffins to the top.

Bake at 400°F for 10 minutes. THEN lower temperature to 300°F and bake for 15 more minutes.

Eden’s Killer Quiche – Kelsey Browning

In Problems in Paradise, the third book in my Texas Nights series, the heroine—Eden Durant—owns Paradise Garden Café. People around the small town of Shelbyville are a little suspicious of her healthy fare, but they’re slowly trying her “clean food” menu. But when three men in town get hit with food poisoning after eating at her restaurant, Eden’s future and her lover’s election chances are jeopardized.

Serves 8

Eden’s Killer Quiche

(adapted from Rachel Ray’s Basic Quiche Recipe)

Ingredients:

· Store bought or homemade pie crust (I favor the refrigerated ones from Trader Joe’s)

· Chanterelle powder (only if you want to recreate Eden’s quiche. If not, you can omit.)

· 6 eggs

· 1 cup milk

· 2/3 cup cream

· 1/2 cup of chevré (goat cheese)

· 1 cup prosciutto, chopped

· Pinch of nutmeg (optional)

· Pinch of salt and pepper

Preheat your oven to 425ºF. If your oven is anything like mine, that’ll take half an hour J.

Whisk the eggs in a decent sized bowl. Then dump in the milk and cream and whisk again. Stir in chevré, prociutto, and spices (except for the chanterelle powder, which really isn’t a spice).

Sprinkle the chanterelle powder over the crust (It’s a mushroom powder. And yeah, I have no idea if you’ll ever be able to find this so don’t get all hyped up about it because it’s the ahem…killer…ingredient in the book – LOL).

Pour your eggish mixture into the piecrust and bake for 30ish minutes. If it’s still jiggly in the middle, pop it back in for another 10 minutes or so. If you don’t like your crust too brown, consider wrapping the edges in aluminum foil after about the first 15 minutes the quiche is in the oven.

Okay, now it’s time for me to admit I’ve yet to cook this exact quiche, but if you try it, let Eden and me know what you think! Happy quiche-ing, y’all!

Spanish Tortilla – Amy Jo Cousins

Magda and Javi, the main characters of The Rain in Spain, spend a magical evening wandering Sevilla. My own trip to Sevilla left me with a love of Spanish tapas, and tortilla in particular.

Spanish Tortilla Recipe:

Ingredients:

1 3/4lb medium potatoes

2 medium onions, thinly sliced

scant 1/2c. extra virgin olive oil

6 eggs

1) Thinly slice the potatoes. Heat 5 TBS of the oil in a frying pan and cook the potatoes, turning frequently, for 10 minutes. Add the onions and seasoning (salt & pepper, I just wing it), and continue to cook gently for a further 10 minutes, until the vegetables are tender.

2) Meanwhile, beat the eggs in a large bowl with a little more salt & pepper. Tip the potatoes and onions into the eggs and mix gently. Leave to stand for 10 minutes.

3) Wipe out the pan and heat the remaining oil in it. Pour the egg mixture into the pan and spread it out in an even layer. Cover and cook over very gentle heat for 20 minutes, until the eggs are just set. Serve cut into wedges.

Tortilla are often made with a bunch of extra ingredients thrown in: chopped bell peppers (red or yellow), peas, corn, grated cheese. The recipe I use (which comes from a cookbook called Cooking With Just Four Ingredients) suggests Cheddar or Gruyère, but I use Manchego because it's my favorite Spanish cheese and tastes delicious. I don't have amounts for extra ingredients, but I think I use about a cup of grated Manchego. If anything, I probably throw in a little extra, because cheese!

You can eat tortilla as soon as it's done cooking, but it's also served cold, straight from the fridge. Serve with a leafy salad and crusty bread for an easy meal.

Best Banana Bread Ever – Serena Shay

Has your coffee been lacking of late?  Tired of the same old donut or danish?  Then I have a treat for you. Try my grandmothers Best Banana Bread Ever...Even with the Vinegar!

Best Banana Bread Ever...Even with the Vinegar

2 cups flour
1 tsp baking soda
1/2 tsp salt
Mix and sift dry ingredients together
1/2 cup shortening (Crisco)
1 cup sugar
2 eggs, beaten
l/2 cup sour milk (or regular milk with 1 tsp vinegar added)
1 cup mashed bananas

Cream sugar and shortening. Add sifted dry ingredients and eggs. Add mashed bananas alternately with the sour milk. Mix well.

Add 1/2 cup walnuts if desired.

Pour into well-greased (one large or 2 small) pans.

Bake at 350 degrees.

1 hour for large pan, 40-45 mins for small pans

Scones – Celeste Jones

These scones are just the thing to have with a cup of tea while enjoying one of my sexy Regency romances.

Scones

3 cups flour

1/2 cup sugar

5 tsp. baking powder

1/2 tsp salt

3/4 c. butter

1 egg, beaten

1 cup milk

Preheat oven to 400 degrees.

Lightly grease a baking sheet.

Combine flour, sugar, baking powder and salt.

Cut in butter. Mix egg and milk together separately then add to the dry ingredients and butter.

Knead on a floured surface and then roll out 1/2" thick. Cut into triangles or circles and bake about 15 mins.

Healthy-ish Blueberry Muffins – Eliza Gayle

What do you give to a pregnant shifter whose only thought at the moment is how she will decide which possessive alpha male she is going to take down first? One of these amazing almost guilt-free blueberry muffins of course. She may be pregnant and cranky, but she’s also very very hungry.

I discovered this recipe on Pinterest last year and after tweaking it a tiny bit, I instantly fell in love with a healthier version of my 2nd favorite breakfast muffin. (Sorry blueberries, nothing will ever beat pumpkin)

HEALTHY-ISH BLUEBERRY MUFFINS

Ingredients

● 2 cups all purpose flour

● 1/2 tsp baking soda

● 1 tsp baking powder

● 1/2 tsp table salt

● 1 tsp cinnamon

● 1 large egg

● 3/4 cup sugar, divided

● 3/4 cup Greek blueberry yogurt (I’m an Oikos girl)

● 1 tsp vanilla extract

● 1/4 cup fat free skim milk, divided

● 1 1/2 cups fresh blueberries, washed

● For the crumb topping:

● 1/4 cup flour

● 1/4 cup sugar

● 1/2 teaspoon cinnamon

● 2 tablespoons unsalted butter, melted

Directions

1. Preheat oven to 425ºF. Grab some muffin liners and your 12 serving muffin pan.

2. In a large bowl, combine 2 cups of flour, baking soda, baking powder, cinnamon and salt; set aside.

3. In another bowl, beat egg with 3/4 cup of sugar until light and fluffy. Add yogurt and beat until thoroughly combined; blend in vanilla extract.

4. Add half of flour mixture and half of milk to sugar mixture; beat until just combined. Add remaining flour mixture and milk; beat until smooth.

5. Fold in blueberries (I’m pretty generous with the blueberries) and fill each muffin liner about 3/4 full.

6. To make crumb topping:

7. Combine remaining 1/4 cup each of sugar and flour in a small bowl. Pour in melted butter and combine with fingers. Divide crumb mixture over muffins; gently press into top of muffin batter with fingertips.

8. Bake for 5 minutes at 425, then reduce your oven temperature to 325. Bake for an additional 12 to 15 minutes, or until slightly golden and a toothpick inserted in center of a muffin comes out clean. Cool in pans for about 10 to 15 minutes and then transfer muffins onto racks to cool completely.

Breakfast Millet – Renee Rose

I do love porridge, but due to dietary restrictions, the only grain I am permitted to eat is millet. Millet is a smart carb with lots of fiber and low simple sugars. Because of this it has a relatively low glycemic index and has been shown to produce lower blood sugar levels than wheat or rice.

Breakfast Millet

1 cup millet

3 3/4 cups coconut milk

1/3 cup almonds

1/3 cup coconut

1 tsp cinnamon

1/3 cup raisins or dried cranberries

 

Simmer ingredients together for approximately 45 minutes.  Top with toasted pecans.

Apricot Breakfast Cookies – Cara Bristol

Dak, a fierce warrior and the hero of Breeder, has a sweet tooth. He’d probably love Apricot Breakfast Cookies, my family’s favorite. The secret recipe (sh!) comes from the Eddie Bauer Legendary Recipe Collection (submitted by Sandy Fleming).

Apricot Breakfast Cookies

1 cup flour

¾ cup sugar

½ tsp. baking soda

½ cup butter

1 egg

2 cups corn flakes

¾ cup cut-up apricots

Blend together flour, sugar and baking soda. Add butter and egg, then mix. Add cornflakes and apricots. Place in tablespoon sizes on cookie sheet. Bake at 350 for 13 to 15 minutes. Makes approximately 2 dozen cookies. (I usually get 3 dozen).

Irresistible Cinnamon Rolls – Isis Rushdan

Around the holidays, I love to bake these yummy cinnamon rolls. They are absolutely irresistible, my family devours them in minutes, and they are super easy to make. This is perfect for any Sunday, the morning after Thanksgiving, or Christmas day.

~ ~ ~

Irresistible Cinnamon Rolls

FILLING:

1 cup packed brown sugar

1 tablespoon ground cinnamon

1/2 cup finely chopped apple (peeled and cored first) I like to use Gala or Honeycrisp

1/4 cup chopped dried cherries

2/3 stick butter, softened

DOUGH:
3 cups all-purpose flour
3 tablespoons sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
5 tablespoons unsalted butter, melted
1/3 cup maple syrup

ICING:

1 stick unsalted butter, softened

1 cup powdered sugar

1/3 cup cream cheese

1 teaspoon vanilla extract

Preheat the oven to 425 degrees. Brush a 9-inch cake pan with 1 tablespoon of the melted butter or use Pam baking spray.

Make the dough. In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, syrup, and 2 tablespoons of the melted butter, and stir until just combined. Transfer the dough to a floured work surface and knead until smooth (it will still be very soft and a little sticky). Place in a lightly floured bowl, cover, and chill for 20 minutes.

This is the perfect time to make the filling. In a small bowl, combine brown sugar, cinnamon, chopped apples and chopped dried cherries. Set aside. You’ll use the softened butter later.

Once the dough is chilled, flatten into a rectangle about 12 X 8 inches on a lightly floured surface. Spread 2/3 cup softened butter across top and then evenly sprinkle the filling, leaving less than a 1/2 inch around the edge. Press the filling down to pack it on top of the dough.

Starting on the long edge, tightly roll up the dough. Try to be gentle as this will likely stick to the counter a bit. Pinch the seam closed and lay the log seam side down. Cut into 8 even pieces, and transfer each roll to the prepared cake pan. Brush with the remaining 2 tablespoons of melted butter. Bake for 20 to 23minutes, until golden brown.

Make the icing while rolls are baking. Combine icing ingredients with an electric mixer until fluffy. Once rolls are done, place a plate on top of pan and flip over. Frost the rolls with the icing. You can also ice rolls while in the pan. Serve warm.

Jalapeno Cheese Grits – Casey Crow

In DANCE WITH A MILLIONAIRE, Campbell and Rod are foodies. They wine and dine at Jean Georges in New York City and two other fabulous places in Italy. After that, Campbell cooks Rod a down home meal complete with collards, cornbread, mashed potatoes, fried chicken, and apple pie. She throws in grits, too.

Jalapeno Cheese Grits

2 cups quick-cooking grits

2 1/2 cups grated extra-sharp Cheddar

1 stick unsalted butter

1 tablespoon hot sauce (recommended: Tabasco)

3 large eggs, well beaten

2 jalapenos, finely diced

1/4 cup canned chopped green chiles

Garlic salt

Directions: Preheat oven to 350 degrees F.

Cook the grits according to the directions on the back of the package. Remove from the heat and add next 6 ingredients (Cheddar through chilies). Stir well and season with garlic salt, to taste. Pour into a buttered 9-inch baking dish and bake for 1 hour. Let cool slightly before slicing and serving.

Bendy Eggs – Anna Sugden

My recipe is for ‘Bendy Eggs’. In A Perfect Distraction, Maggie doesn’t like to cook, but she often makes ‘Bendy Eggs’ as a special breakfast treat for her daughter, Emily. Naturally, Maggie ends up making it for Jake too. :)

‘Bendy Eggs’ are a poor man’s version of Eggs Benedict (my favourite!):

2 eggs

4 strips of bacon

1 English muffin

Cream cheese

1. Toast the English muffin and spread a generous helping of cream cheese on each half.

2. Cook the bacon strips and lay two on each half.

3. Fry or poach the eggs, then place on top of the bacon on each half

4. Voila - Bendy Eggs!

Spinach and Feta Quiche – Meg Benjamin

Hi all! This is an old recipe, from back in the day when quiche was cool, but it’s still yummy.

SPINACH AND FETA QUICHE

2 pie crusts, frozen or homemade

1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry

6 oz. feta cheese, crumbled

1/2 c. cottage cheese

6 green onions, sliced (tops too)

1 tbsp. olive oil

1 tsp. dry basil

1/2 tsp. pepper

1/4 tsp. garlic salt

4 eggs

1/2 c. milk

Prepare crusts and bake (frozen pre-made works fine). Squeeze moisture out of spinach, set aside.

In a blender or food processor, mix feta cheese, cottage cheese, green onions, oil, basil, pepper and garlic salt until smooth. Add eggs and milk. Blend well. Pour into bowl and add spinach. Pour into baked pastry shells. Bake at 350 degrees until knife inserted in center comes clean, 30-45 minutes. Let stand 10 minutes. Serves 6.

Microwave Monkey Bread – J. Rose Allister

This is one of the first things I taught my kids to make when they were younger. It's so yummy and fast! These are great when you're busy writing and want something quick and easy, or on those mornings when you're on the run.

~ ~ ~

3 tbsp. butter
1/3 c. brown sugar
1 tsp. cinnamon
1 tbsp. water
1 pkg. refrigerator biscuits

Combine butter, brown sugar, cinnamon, and water in a microwave-proof dish (I use a glass pie plate). Microwave on high 45 seconds-1 minute until melted together. Place biscuits on top of butter mixture (you can leave whole or cut in half to make smaller servings). Cook 2 minutes on high until done. Biscuits will not brown, but will rise and look dry/set up. If not done, microwave in additional 15 second increments until finished. Let cool 2 minutes before serving.
