Mushroom Pie – Lauren Royal

|

IMG_2328

In my book EMERALD, Caithren and Jason stop at a tavern for a meal and are served this delicious mushroom pie. It’s one of my family’s favorites—my daughter and I make it every Thanksgiving and often at other times, too. If you need to eat gluten free like I do, simply buy GF pie crust. Everything else in this recipe is naturally gluten free. For more historical recipes from my novels, visit the recipe page on my site at http://www.laurenroyal.com/3.0/bookshelf/recipes/. Enjoy!

Mushroom Pie

Original Historical Recipe:

Mushrooms of one night be the best and they be little and red within and closed at the top; and they must be peeled and then washed in hot water and parboled and if you wish to put them in a pasty add oil, cheese and spice powder.

—From The Goodman of Paris (Le Ménagier de Paris), written in 1393 and translated by Eileen Power

Modern Version:

1-½ lbs. sliced button mushrooms

2 tablespoons olive oil

1-½ cups grated or shredded cheese (cheddar, mozzarella, parmesan, or a combination)

½ teaspoon salt

¼ teaspoon pepper

½ teaspoon chopped or crushed ginger (I use the kind you buy in a jar) or dry ground ginger

¼ teaspoon pepper

9″ ready-to-bake pie crust (top crust optional)

Follow the directions on the pie crust package to pre-bake the bottom crust.

Saute the mushrooms. Drain any liquid, then place in a large bowl and add olive oil, cheese, salt, pepper, and ginger. Mix well.

Place mushroom mixture in the pie shell. Add top crust if desired, and make slits with a sharp knife.

Bake at 350° F (180° C) for 35–40 minutes, or until pastry is a golden brown.

England and Scotland, 1667

Jason Chase, the Marquess of Cainewood, is out to bring a blackguard to justice when he crosses paths with a woeful Scottish lad. When the lad turns out to be a lovely Scottish lass, he realizes she must be the notorious bounty hunter Emerald MacCallum. Convinced they're after the same man and her very life may be in danger, Jason decides he must keep Emerald close…

In Caithren Leslie's view, there couldn't be enough distance between her and the handsome but overbearing Englishman. She's searching for her wayward brother, but Jason won't let a little thing like the truth interfere with his absurd conviction that she's living under an assumed identity. Mindful of the dangerous traveling conditions, Cait grudgingly accepts his protection. Until, that is, she begins to suspect that mistrust isn't the only emotion between them…and their mission for justice just might turn out to be a quest for love...

Irresistible Cinnamon Rolls – Isis Rushdan

|

clip_image002

Around the holidays, I love to bake these yummy cinnamon rolls. They are absolutely irresistible, my family devours them in minutes, and they are super easy to make. This is perfect for any Sunday, the morning after Thanksgiving, or Christmas day.

~ ~ ~

Irresistible Cinnamon Rolls

FILLING:

1 cup packed brown sugar

1 tablespoon ground cinnamon

1/2 cup finely chopped apple (peeled and cored first) I like to use Gala or Honeycrisp

1/4 cup chopped dried cherries

2/3 stick butter, softened

DOUGH:
3 cups all-purpose flour
3 tablespoons sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
5 tablespoons unsalted butter, melted
1/3 cup maple syrup

ICING:

1 stick unsalted butter, softened

1 cup powdered sugar

1/3 cup cream cheese

1 teaspoon vanilla extract

Preheat the oven to 425 degrees. Brush a 9-inch cake pan with 1 tablespoon of the melted butter or use Pam baking spray.

Make the dough. In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, syrup, and 2 tablespoons of the melted butter, and stir until just combined. Transfer the dough to a floured work surface and knead until smooth (it will still be very soft and a little sticky). Place in a lightly floured bowl, cover, and chill for 20 minutes.

This is the perfect time to make the filling. In a small bowl, combine brown sugar, cinnamon, chopped apples and chopped dried cherries. Set aside. You’ll use the softened butter later.

Once the dough is chilled, flatten into a rectangle about 12 X 8 inches on a lightly floured surface. Spread 2/3 cup softened butter across top and then evenly sprinkle the filling, leaving less than a 1/2 inch around the edge. Press the filling down to pack it on top of the dough.

Starting on the long edge, tightly roll up the dough. Try to be gentle as this will likely stick to the counter a bit. Pinch the seam closed and lay the log seam side down. Cut into 8 even pieces, and transfer each roll to the prepared cake pan. Brush with the remaining 2 tablespoons of melted butter. Bake for 20 to 23minutes, until golden brown.

Make the icing while rolls are baking. Combine icing ingredients with an electric mixer until fluffy. Once rolls are done, place a plate on top of pan and flip over. Frost the rolls with the icing. You can also ice rolls while in the pan. Serve warm.

Raisin Tea Buns – NJ Walters

|

This is my grandmother’s recipe and I’ve been making it since I was a kid. I can remember standing at the counter next to her and she’d let me cut the biscuits out of the dough using a juice glass. Easy to make and so good hot out of the oven smothered in butter.

~ ~ ~

RECIPE: Raisin Tea Buns

4 Cups Flour

8 tsp baking powder

½ Cup Butter

2/3 Cup Sugar

1 tsp Salt

2 eggs (well beaten)

1 Cup Milk

1 Cup Raisins

Combine dry ingredients (flour, baking powder, sugar and salt). Blend in butter. Add eggs and milk. (You may need to get in there with your hands at this point.) Add raisins.

Roll out and cut into circles. Or simply pinch off dough and roll into circles.

Bake at 400 degrees for 12-15 minutes. (I sometimes pop the oven on broil for a minute if the tops aren’t browned enough.)

VARIATION:

Make dough without raisins and roll it out into a rectangle shape. Lightly butter it then sprinkle brown sugar and raisins (or you can use brown sugar and cinnamon). Carefully roll dough into log shape. Cut into ½”-1” circles. Place in pan and bake for 10-12 minutes at 400 degrees. Makes great cinnamon rolls.

Cinnamon Buns of Obsession–Eliza Gayle

|

In Tucker’s Fall, heroine Maggie Cisco shares her love of Cinnamon rolls with Tucker, who finds her enthusiasm for the treats incredibly sexy.

When Maggie is in need of a quick fix of her favorite comfort food, this is the recipe she goes to. Easy Peasy.

~ ~ ~

Miss Maggie’s Cinnamon Buns of Obsession

What you need to make this amazing deliciousness of gooey goodness:

For the Filling:
3/4 cup packed brown sugar, 1/2 c granulated sugar, 1 Tbls cinnamon, 1/2 tsp salt, 2 Tbls butter, melted

For the Dough:
2-1/2 c. all purpose flour, 1/4 c. granulated sugar, 1-1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp salt, 1 c buttermilk, 5 Tbls butter, melted.

For the Icing:

1 pkg (8 oz) of cream cheese (room temp), 2 cups of powdered sugar, 1/2 cup of margarine, 1 tsp vanilla (Maggie goes heavy on the icing.)

Directions: (oven 425)

· Combine filling ingredients in a small bowl, then mix with a fork until well blended.

· In a another, larger bowl, combine flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk together buttermilk and 4 Tbls melted butter, then pour into the middle of the dry ingredients. Stir together until dough just comes together (do not over mix.) Kneed a bit with your hands until the dough forms into a ball, then slice it in half.

· On a lightly floured surface, roll each half into a 12×8″ rectangle Spread half the filling mixture into the center, then roll. Pinch together edges, and cut into 8 slices. Place both cut rolls in a non-stick sprayed 11×8″ pan. Brush rolls with remaining Tbls of melted butter and bake for 15 minutes, or until golden brown.

· To make the icing, beat all ingredients together with a mixer until smooth. Spread the icing on the hot rolls and enjoy!

Tucker's Fall

volcanic

Scandalized professor Maggie Cisco returns to her hometown to lick her wounds and reconsider her future. Her years of personal and professional research into the BDSM lifestyle has landed her in jail, in divorce court and now in the headlines of more newspapers than she cares to count. The worst of all? The entire debacle is being blamed on a bestselling book she hasn’t even read!

Just when she thinks her only solution is a tell all memoir, a snowstorm puts her in the path of stunningly handsome, insanely rich and equally intense, Tucker Lewis.

Tucker remembers Maggie well. They once shared a mind-numbing kiss at the annual St. Mary’s carnival when her boyfriend wasn’t looking. No stranger to scandal, he looks past public opinion to the submissive craving a master’s touch and decides then and there what he wants. He’s going after Maggie and her heart’s kinkiest desires.

Unfortunately, no amount of money can change the sins of the past and when they’re certain they know everything there is to know about each other, one discovers a secret they aren’t prepared for.

Apple Danish - Sky Robinson

|

I love to garden and love to cook, but sometimes I get sick of it, just want a day off where someone pampers me. So, in my latest book, Bermuda Triangle I wrote a hero that was into gardening and cooking. There’s nothing sexier than a good looking, shirtless man making a meal. Well, maybe what happens after supper ...

I have a couple apple trees in my backyard, and this Apple Danish recipe is a favorite at my house.

~ ~ ~

PASTRY:

•3 cups all-purpose flour

•1/2 teaspoon salt

•1 cup butter

•1 egg

•1/2 cup milk

FILLING:

•6 cups sliced peeled apples

•1-1/2 cups sugar

•2 tablespoons all-purpose flour

•1 teaspoon cinnamon

GLAZE:

•1/2 cup confectioners' sugar

•2 to 3 teaspoons water

Directions

In a bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. Combine egg and milk; add to flour mixture. Stir just until dough clings together. Divide dough in half.

On a lightly floured surface, roll half of dough into a 15-in. x 10-in. rectangle; transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Set aside.

In a bowl, toss together filling ingredients; spoon over pastry in pan. Roll out remaining dough into another 15-in. x 10-in. rectangle. Place over filling. Bake at 375° for 40 minutes or until golden brown.

For glaze, combine the confectioners' sugar and enough water to achieve a drizzling consistency. Drizzle over warm pastry. Cut into squares. Serve warm or cold. Yield: 20-24 servings.

A plane crash leaves pilot Paige Williams stranded on an island in the middle of the Bermuda Triangle with sexy twin brothers Dalton and Cooper Thompson. She tries to resist the advances of both, knowing it would only be a fling, but as time passes she has to face the fact they may never be rescued. Paige doesn’t want to choose one brother over the other, so Dalton and Cooper come up with a solution—they’ll take turns having Paige’s beautiful body.

Soon jealousy and tension make them rethink the arrangement. The only way to keep the peace is for all three to be involved in every sexual adventure, and it turns out to be more fulfilling than they thought possible. Who wants to be rescued when you’re living in paradise?
