Down Home Chicken Pot Pie – Cynthia Luhrs

Cold nights call for a comforting warm dish that’s super easy to make. A chicken pot pie and a prepared salad makes a great meal whenever you're called upon to bring a meal to someone in need. They’ll ask, so make sure to include a copy of the recipe.

Down Home Chicken Pot Pie

makes 2 pies (cook one now and freeze one for later). Each pie serves 4-6

Ingredients:

  • 2 packages pie crust (found in the refrigerated section of your grocery store)
  • 4 boneless skinless chicken breasts
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 29oz can of veg-all homestyle large cut vegetables OR cut up your favorite veggies. Approx. 3 1/2 cups. try carrots, potato, asparagus and green beans

Directions:

  1. season the chicken breasts with lemon pepper or McCormick montreal chicken seasoning and bake at 400 degrees for 20 minutes or until no longer pink. cut into bite-sized chunks.
  2. mix all ingredients together in a large mixing bowl.
  3. in a deep dish pie pan, press crust down and fill with half the chicken/veggie mixture. Top with another pie crust, crimping edges together. Pierce the top of the crust with a fork in several places.
  4. Repeat for 2nd pie.
  5. Bake at 350 degrees for 1 1/2 hours. 
  6. Let cool for 5-10 minutes before serving. Note: If you only want to cook one pie, either half the recipe or freeze the second chicken pot pie after assembling to cook at a later date.

Accident Chicken – Tigris Eden

This is a family favorite we like to call, “Accident Chicken over White Rice”

5 Boneless Skinless Chicken Breast

Lawyer’s Season Salt

Pink Himalayan Salt

Black Pepper

Onion Powder

Maple Syrup

Uncle Bens White Rice Boil in a bag

Foil

Baking Pan *glass pan if possible*

Pot

Pre-heat your Oven to 350 degrees

*This recipe will work better if baked in a clear glass dish.*

Chicken Prep

Line your glass pan with foil, (this is so the syrup doesn’t stick to your pan). Arrange the chicken in the pan and lightly season chicken with, pepper, season salt, pink salt, and onion powder on both sides of the chicken breast. Once that is complete get your maple syrup and drizzle it across each chicken breast. I like to do this in a zig zag motion. You don’t want to completely cover your chicken in syrup. This will cause all the season to roll right off.

Cover you chicken with foil and then place in the oven for 30-35 minutes at 350 degrees. If you have an electric stove I would take it down to 325 and cook for an additional 5 minutes.

Wait about 20 minutes before you start the rice. This way the rice will still be nice and fresh when you pull it out of the bag. Boil your water in a pot. Small, medium, or large. Depending on the amount of people you are serving. I serve 5 people so I use two bags of rice. Once the water is starts to boil place the bag of rice in the water and let it boil for the allotted time on the box. 7-10 minutes.

Your chicken and rice should be done within minutes of each other.

Place rice on a plate and one chicken breast over the plate of rice. I usually serve this with a side of veggies and crescent rolls.

*There is no need to butter, salt, or sugar your rice. The maple syrup from the chicken will give the rice the extra flavor it needs. No doctoring required*

Turkey/Chicken Tetrazzini with a New Mexican Twist - Samantha Ann King

My family likes this recipe so much that I make it all year long. When I don't have leftover turkey, I simply substitute shredded chicken breasts. I frequently double the recipe and freeze one for later.

Turkey/Chicken Tetrazzini with a New Mexican Twist

Ingredients

8 oz whole wheat fusilli/spiral pasta (or whatever pasta you have in the pantry)

2 cups shredded cooked turkey or chicken

3 tablespoons butter

1 onion chopped

2 cups shredded Cheddar/Jack cheese

2 cups half and half

2 oz jar diced pimentos, drained, or ¼ cup chopped roasted red bell peppers

4 oz can chopped green chile, drained (I use mild, but if you'd like something spicy, try medium or hot.)

1 teaspoon salt

½ teaspoon black pepper

1-2 cups fried onions (Although, I've made it without these when I don't have them.)

Preheat oven to 350F.

Cook pasta according to instructions. Drain and spread in 9x13 pan. Mix in shredded turkey or chicken.

Melt butter in a large skillet or Dutch oven over medium heat. Add onions and cook until translucent. Add cheese, half and half, and pimentos or roasted red bell peppers, green chile, salt and pepper. Stir until thoroughly heated. Pour into pan with pasta and turkey/chicken.

Sprinkle fried onions on top. (If freezing, put the fried onions in a Ziploc and freeze with casserole. After thawing the Tetrazzini, sprinkle the fried onions on top.)

Bake uncovered for 30 minutes or until bubbly.

Neighborly Chicken – Rebecca J. Clark

A neighbor from our very first house, years ago, gave me this recipe, but I can’t for the life of me remember her name. It’s become a go-to recipe because it’s quick to put together, it tastes great, and it never fails--and it’s fast to cook.

Dijon Mustard & Melted Butter (I use a bit more dijon than butter...)

Parmesan cheese (the shake type)

Seasoned breadcrumbs (I like Panko, because of the crunch)

Boneless, skinless chicken breasts

Preheat oven to 500 degrees.

Spray bottom of casserole or cake pan with Pam. Dip tops of chicken in dijon/butter mix, then into cheese and breadcrumbs. Place bare side down in pan. Bake for 15 minutes.

California Chicken Spaghetti – Darlene Gardner

How’s this for an idyllic summertime romance? My husband likes to grow vegetables, and I love eating them. This is one of my favorite dishes, partly because I can use the fresh tomatoes and garlic from our (his) garden. I can’t claim credit for the recipe, but I can for the tweaks! Another plus is that it’s ready in thirty minutes.

California Chicken Spaghetti

1 (16 ounce) package uncooked angel hair pasta

3 tablespoons olive oil

4 skinless, boneless chicken breasts (cut into strips)

2 tablespoons chopped, fresh garlic

3-4 tablespoons Creole seasoning (original recipe calls for 2 tablespoons Cajun-style blackened seasoning and 2 tablespoons basil)

sat and pepper to taste

3 or 4 fresh tomatoes with skin removed (original recipe calls for 10 diced roma tomatoes)

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 5-8 minutes or until al dente. Drain.

Heat olive oil in large skillet over medium heat. Coat chicken pieces in Creole seasoning. Add fresh garlic and chicken pieces to skillet until browned on the outside.

Mix in the tomatoes. (I remove tomato skin by dipping briefly in boiling water, than peeling). Cook until tomatoes are semi soft and chicken is cooked through.

Toss with pasta and sprinkle crumbled feta cheese on top. Delicious!

Southwestern Marinated Chicken -- Keira Ramsay

BBQ season is upon us, and to me, there’s nothing better than throwing some marinated chicken on the grill. The recipe that follows can also be cooked in the oven (under the broiler) and served on tortillas, but there are so many different variations, it’s amazing!
 ~ ~ ~ 
Southwestern Marinated Chicken
½ cup lime juice 6 tablespoons soy sauce (I use reduced sodium)
2 tbsp dark brown sugar (or 1 tbsp molasses)
2 tbsp chopped fresh oregano (fresh makes ALL the difference in this!)
2 tbsp chopped fresh rosemary
2 tbsp chopped/minced fresh garlic
1 tbsp chili powder
1 ½ tsp chipotle chili powder
8 boneless, skinless chicken thighs


  • Combine first eight ingredients, whisk to blend. Pop chicken in and push down until chicken is covered. Marinate at least 6-8 hours. 
  • Either grill outside OR on broil on foil-covered baking sheet in oven 
  • Take remaining marinade and cook down, using a mixture of corn starch and water to thicken (or your thickening agent of choice). 
  • Multiple ways to serve: 
    • By itself 
    • On tortillas, with toppings of choice (I use avocado, sour cream, pepper jack cheese, shredded lettuce and the marinade reduction) 
    • On a bed of lettuce, with ingredients of choice, using marinade reduction as dressing 
    • On a Kaiser roll, with pepper jack cheese, mayo & toppings of choice.

Chicken Picatta – Abigail Sharpe

In Who Wants to Marry a Cowboy, eight woman participate in a marital rodeo with the cowboy as the unwilling first prize.  The "rodeo" involves showing off cooking skills, so I had the heroine and her nemesis cook the one impressive recipe in my repertoire:  Chicken Picatta.  (And there are no strong onions in it, regardless of what the nemesis would have you believe.)

Serves 2

Ingredients
  • 2 6- to 8-ounce skinless boneless chicken breast halves
  • 1/4 cup fresh parsley leaves
  • 3 teaspoons olive oil, divided
  • 1 1/2 teaspoons and 2 tablespoons minced shallot
  • 1/2 teaspoon and 2 tablespoons lemon juice
  • 4 1/2 teaspoons drained capers, divided
  • 1 teaspoon minced garlic
  • 1/3 cup dry white wine
  • 1 tablespoon butter
  • 1 1/2 teaspoons minced fresh parsley
What to Do:
  • Put the chicken in a large storage bag and pound it down until it's less than half an inch thick.  I don't own a meat mallet, so I use a soup can.
  • In a small bowl, toss in the parsley with 1.5 t oil, 1.5 t shallots, .5 t lemon juice, and 1.5 t capers. 
  • Spray non-stick spray in a heavy large nonstick skillet over high heat. Add the chicken to skillet and sauté until just cooked through and golden brown, about 3 minutes per side. Transfer to platter and cover with foil to keep warm.

  • Reduce heat to medium-high. Add remaining shallots and garlic to same skillet and sauté until tender, about 1 minute.

  • Add wine and remaining 2 tablespoons lemon juice and simmer 1 minute.

  • Whisk in remaining 3 teaspoons capers, butter, and minced parsley. Stir any juices from chicken into sauce and season to taste with salt and pepper. Pour sauce over chicken and sprinkle chicken with parsley-caper mixture.

Dump Chicken-Olivia Mayfield

I'm a pretty busy lady (as I'm sure most of you are!), so I lurve my crock pot. Here's one of my fav recipes to make, and it's suuuuper easy, with only 4 ingredients. We call it Dump Chicken, but since that's not very sexy, feel free to give it your own foxy title. ;-)

RECIPE: 1 packet of taco seasoning

1 to 1 1/2 pounds of cubed, thawed chicken breasts (or thighs, if you prefer)

1 jar of salsa

1 jar of apricot jam

Mix all together in a crock pot and cook on low for 3-4 hours, stirring occasionally. Serve over rice. Voila--instant deliciousness!

Peanut Butter Chicken – Cheryl Alldredge

Peanut Butter Chicken
This dish started out as a marinade for Asian Peanut Chicken Skewers. The skewers weren’t right for me, but I’m a huge fan of peanut butter so I put together this easier version that looks less elegant, but has been a hit around my house. If you love peanut butter too, be adventurous and give it a try!

Peanut Butter Chicken
Ingredients
1 ½ lbs. boneless, skinless chicken breast, cut to small chunks
¾ c. chunky peanut butter
¾ c. Grey Poupon Deli mustard
3 Tbsp. low sodium soy sauce
Optional: Jasmati Rice, cooked
Directions
Mix peanut butter, mustard, and soy sauce in a medium sized bowl. Mix well, then fold in chicken and refrigerate while you prep the rest of your meal. You can also make this ahead and leave it in the refrigerator for a few hours before you’re ready to cook, but I never plan that far ahead.
Spread the mixture in the bottom of a large non-stick skillet and cook over medium heat, turning gently every few minutes. It will look a little weird, but don’t worry it does get better. The idea is to let the peanut butter and mustard crisp but not to let it burn. Cook until chicken is done, about 20 minutes, depending on the size of your pieces.
Serving Suggestions:
I serve this over Jasmati rice. The nutty aromatic quality of the rice goes well with the peanut butter. I also serve with a vegetable and salad on the side.
Asian: You could also increase the soy sauce to 4 Tbsp., decrease the peanut butter to ½ c., use a honey mustard instead of the deli mustard, and serve with Chinese vegetables to take this recipe back to its Asian roots.

Heavenly Southwest Chicken–Nena Clements

I spent over ten years in the West Texas town of El Paso. During this time I fell in love with the foods and flavors of the southwest. Chiles and peppers and hot spices became an integral part of my cooking. This recipe is an adaptation of Cordon Bleu, with a Mexican twist. I hope you try it and love it as much as my family does.

Heavenly Southwest Chicken

3 whole chicken breasts

4 cloves garlic

¼ tsp cayenne pepper

2 cups bread crumbs

6 slices turkey bacon

4oz. Cotija cheese

1 small can whole green chiles

6 toothpicks

Cut each chicken breast in half length-wise and tenderize the six pieces.

To the buttermilk add the four minced cloves of garlic and the cayenne pepper. (I like spicy so you can omit if you don’t like it hot.)

On the chicken layer one green chile slice, one slice bacon and a slice of cheese. Roll all these together in a tight roll and secure with the toothpick.

Dip the roll into the buttermilk mixture and then coat with bread crumbs.

Place on a greased baking sheet and bake at 350 degrees for 30 mins.

Baked Honey Mustard Chicken – Eve Cassidy

My family and I have been working hard to mend our bad eating ways. It's a constant struggle and I am always on the look out for really easy and delicious recipes that also happen to be good for you. This chicken dish is by far one of our favorites and gets made often.

Baked Honey Mustard Chicken

Ingredients

  • 2 lbs. Boneless, skinless, split chicken breasts
  • 2 cloves of garlic, chopped
  • 1/2 cup all natural coarse grain mustard
  • 7 Tbsp of honey
  • 1/2 tsp dried thyme
  • Pinch of Chipotle pepper
  • 2 green bell peppers
  • 2 red bell peppers
  • Cooking spray
  • Fresh chopped parsley

Directions

  • Mix in a medium bowl the garlic, mustard, honey, thyme and chipotle pepper. Mix in chicken and stir well to get the chicken covered. Cover the bowl and place it in the refrigerator for several hours to marinate. I stir the chicken every so often when I go to the refrigerator for a drink or a snack.
  • When you are ready to prepare dinner, line a baking sheet with foil, mist with cooking spray and preheat oven to 375. 
  • lay out sliced peppers on the baking sheet, then place marinated chicken on top. Bake in the oven until meat is at an internal temperature of 165 degrees (I am crazy faithful to my meat thermometer)
  • Sprinkle with parsley and serve

*Please note this was originally a clean eating recipe that my family has altered, especially in the preparation process. But it's so good and people are always asking for the recipe. If you aren't feeding a large hungry family you might want to cut this recipe in half.

Salsa Chicken – Maisey Yates

My recipe is SO easy I feel like I’m cheating. But I’m a busy mom and a busy writer, so that’s just the kind of meal I need! (Bonus, this is low fat and low calorie!)

I call this Salsa Chicken (inventive, yes?) and my whole family loves it!

You need: 1lb-2lbs of chicken breasts. (it would work with a whole chicken, but I’m lazy and go with the trimmed, boneless skinless portion of the chicken)

1 Jar of salsa

Taco seasoning (to taste)

1/2 a cup of chicken broth (optional, I like it because chicken breasts can tend to get a little dry)

Put your chicken (it can even be frozen) in the crock pot along with the salsa, taco seasoning and broth and turn it on high. Cook it until it pulls apart easily with a fork, then shred it up. Serve with rice, on tortillas, in a bowl...however you like!

Fajitachiladas – Sarah Bella

This is a recipe I made up one day when I was looking for something different for dinner. Luckily for me, it actually turned out and it’s one of my family’s favorites now.

You’ll want to make the enchilada sauce first as it takes longer than the rest of the meal.

Ingredients:

· 1 ½ lbs chicken breasts, sliced fajita style

· 1 red bell pepper, sliced fajita style

· 1 green bell pepper, sliced fajita style

· 1yellow or orange bell pepper, sliced fajita style

· 1 small yellow onion, sliced fajita style

· 1 cup frozen corn kernals

· 1 can black beans – rinsed and drained

· ½ t Chili powder

· ¼ t Cumin

· ¼ t Garlic powder

· ¼ t Salt – I prefer sea salt

· ¼ t Fresh ground pepper

· 1 c. grated cheese – preferably cheddar or Colby

· 1 package taco sized flour tortillas

· Enchilada sauce – recipe below

In a large frying pan, combine chicken and veggies. Season when chicken is no longer pink on the outside. Cook until chicken is no longer pink in center and veggies are tender-crisp. Add corn and beans, continue cooking until corn is thawed.

Stir in ½ c enchilada sauce and cook until it thickens slightly. Remove from heat.

Spoon equal amounts of the chicken and veggie mixture onto each of the 8 tortillas and roll them closed. Place them in a 9x13 cake pan. Cover them with the remaining enchilada sauce and top with cheese.

Bake in preheated oven for 20 minutes or until cheese and sauce are bubbling.

Enchilada sauce – I have a few different options based on how much time you have.

Ingredients:

· 2 tbsp vegetable oil (authentically you would use lard.)

· 2 tbsp flour

· 2 tbsp chili powder*

· 1/2 tsp cumin

· 1/4 tsp cayenne pepper, or to taste

· 2 cups chicken broth

· 1 8 ounce can tomato paste**

· 1 tsp garlic powder

· 1/2 tsp onion powder

· 1/2 tsp salt

Preparation:

Heat the oil, flour and chili powder together in a large pot. Allow to cook for a minute or two.

Add the remaining ingredients and bring to a slow simmer. Stir well to combine and dissolve tomato paste in broth. Allow to cook for at least 20 minutes, stirring occasionally. Add more spices as desired.  

**This is a skeleton recipe.  If I have time, I roast peppers onions and tomatoes then blend them together in a food processor and push them through a sieve to remove the tomato skins and seeds.  I use that instead of the tomato paste; If you have time it’s appreciably better.

*Use a dark chili powder such as ancho, or use a combination of different chili powders for a more complex flavor, chipotle - ancho - arbol for example.

Fried Chicken Tenders – Loribelle Hunt

It's almost summer in the South. (Well, were I live it's been summer for a month lol!) That means lots of grilling, and of course, fried chicken. This is easy to make and something my kids are guaranteed to eat.

~ ~ ~

You'll need:

1 pound chicken tenders

Self rising flour

3 eggs

Vegetable oil

Supplies:

2 large bowls

Deep frying pan

Put oil in pan about 3 inches deep. Add the eggs, beaten, in one bowl and put flour in a second. Soak the tenders in egg, dredge through the flour, and then repeat. Once the chicken is prepared drop in hot oil. Cook 10 minutes or until crispy. Remove and lay on paper towels. Salt to taste.

Chicken Tikka Masala – Sandra Sookoo

My love for this cuisine started when I met my husband on the Caribbean island of Trinidad. He’s from a big, loud Indian family. It took me a few years after we got married before I started perfecting the dishes and they’re much cheaper than take out.

~ ~ ~

Ingredients

1 cup yogurt (plain) (Greek yogurt works incredibly well)

1 Tablespoon lemon juice

2 Teaspoons ground cumin

1 Teaspoon ground cinnamon

2 Teaspoons ground black pepper

1 Tablespoon minced fresh ginger

½ Teaspoon salt

3 boneless skinless chicken breasts cut into bite-sized pieces

Sauce Ingredients

1 Tablespoon butter

1 minced garlic clove

½ cup chopped onion

1 Teaspoon cayenne pepper (feel free to omit if you don’t want it spicy)

2 Teaspoons ground cumin

2 Teaspoons paprika

½ Teaspoon salt

1 eight ounce can of tomato sauce

1 cup heavy cream

¼ cup chopped fresh cilantro

Directions

In a large container or bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, black pepper, gingers and ½ teaspoon salt. Stir in the chicken, cover and refrigerate for a couple of hours.

Melt butter in skillet over medium heat. Sauté garlic and onions for one minute. Season with 2 teaspoons cumin, 1 teaspoon cayenne, paprika and ½ teaspoon salt.

Add chicken in pan to cook. Discard leftover marinade.

Let chicken cook halfway.

Stir in tomato sauce and cream. When incorporated, stir and simmer on low heat until sauce thickens and chicken is fully cooked which will be about 20 minutes. Taste sauce. You may need to add a pinch of salt.

Serve over basmati rice and garnish with fresh cilantro. Serve also with warm na’an bread.
