Pumpkin White Chocolate Chip Cookies – Regina Cole

Pumpkin. It’s not just for fall anymore.

Sure, that’s when they’re ripe. Of course, that’s when you want to do lots of jack-o-lantern carving. But I say, why wait to have that deliciousness? My husband is a HUGE fan of pumpkin, and so I try to keep cans of It handy year-round. Because once you’ve tried these Pumpkin White Chocolate Chip cookies, you won’t want to wait another year for more!

Pumpkin White Chocolate Chip Cookies

-1/2 cup shortening

-1 and 1/2 cups white sugar

-1 egg

-1 regular size can pure pumpkin (NOT pie mix!)

-1 teaspoon vanilla extract

-2 and 1/2 cups all purpose flour

-1 teaspoon baking powder

-1 teaspoon baking soda

-1 teaspoon salt

-1 HEAPING teaspoon ground cinnamon

-1 teaspoon ground nutmeg

-1 cup, (or, as I like to make them, 1 whole bag) of white chocolate chip morsels.

Preheat your oven to 350 degrees in the US. If your oven has Celsius, erm, good luck. J Grease your cookie sheets. You’ll need two!

In a large bowl, cream together the shortening and sugar until light and fluffy. (What. I said this was a GOOD recipe, not a healthy one!)

Beat in the egg, then stir in the pumpkin and vanilla. Combine all the dry ingredients in a separate bowl, then gradually add them into the creamed mixture. Stir in the cinnamon chips, and if you’re feeling adventurous, toss in some macadamia nuts too. (YUM)

Drop the dough by teaspoonfulls onto the prepared cookie sheets. Bake ‘em for 15 minutes in your preheated oven, or until they’re light brown. Cool on wire racks. As if you can wait that long to stuff them in your face. At least, me and hubs can’t!

The cool thing about this recipe is that you can switch it up. Use semisweet chocolate chips instead of white chocolate, if you like them. Add in some pecans, or other kind of nut if you feel like it. These are soft, cake-y cookies that are so moist and delicious you’ll beg for another batch almost instantly.
